Infusing tea – the process of steeping tea leaves for a perfect cup – is an involved art. Begin by warming both the teapot and filter with simmering water. Next, measure 7 g of tea into the cotton filter. The secret is to allow the tea leaves time to awaken to the steam before infusing into water. Now that the tea leaves are prepped, pour 500 ml of water – at the ideal temperature of 95°C (203°F) – over the leaves.

Gently place the lid back on the pot and play your favourite concerto for 3 minutes while allowing the tea leaves to unfurl. Simmering water will promote the taste and aroma of the tea leaves, developing the full complexity of the flavour of each variety of tea. Finally, remove the filter, allow the tea to cool slightly, and enjoy the aroma.
