WATER

Always select the purest water available. Filtered water is recommended. When possible, choose soft water, since a high calcium content (found in mineral or tap water) gives rise to deposits on the surface of the cup, affecting the taste of the tea.

TEMPERATURE

To bring out the full complexity and flavour of the tea, the ideal temperature for the perfect infusion varies according to the type of tea. For the highest grade white teas, yellow tea, and green teas, the water should be heated to 70°C (158°F). For other varieties of green teas, blue teas, black teas, matured teas and red teas, the water should be between 90°C (194°F) and 95°C (203°F) – this helps the water to maintain its dissolved oxygen content, which is essential to bringing out the flavour of the tea.

INFUSION

The infusion time for tea depends on the variety: 3 minutes is ideal for black, matured, and red teas. Fine green teas can benefit from a shorter infusion time of 2½ minutes; blue teas can be infused for up to 7 minutes; and white teas for up to 15 minutes.
