THE TASTE OF SPRING…
A breath-taking variety of edible flowers have recently been finding their way to the table. And not just in your cup of chamomile. Plates of fresh greens are increasingly adorned with an entirely new palate of colours and flavours. In addition to the time-honoured hibiscus, rose and violet, new varieties are cropping up. Sun drenched sunflower petals, saffron coloured marigold blossoms, sky blue cornflowers and cherry blossoms are now dazzling us with their loveliness. But beyond the fragrance and bold colours of these flowers, what of the flavour of these ethereal blooms?
TWG Tea connoisseurs have long been acquainted with the wild beauty of flower blossoms. With source gardens in Provence, France, where our celebrated Grasse roses grow, our tea blenders experiment with over 250 other edible flowers when creating our celebrated blends. Although blooms are most often used to brighten a blend or add colour to an infusion, our tea blenders will often also use flowers to enhance a tea with a subtle yet pronounced flavour to create a unique experience in the teacup.
Take the French cornflower, for example. While the unearthly caerulean colour does indeed delight the eye, the flavour is downright astonishing. Raw and spicy, the delicate petals explode with flavour, akin to a bud of clove. The marigold is another shocker. Known by some as ‘poor man’s saffron’, the marigold can range from spicy to bitter, tangy to peppery. Sunflowers petals are also edible and present an entirely novel taste experience, slightly bittersweet with a hint of nuttiness.
Edible flowers do not just grace your terrace garden – flowering trees such as elderberry and cherry delight and surprise with a profusion of aromas and flavours as well, which when combined with just the right tea, can astonish your taste buds. The blossoms of the elderberry tree, for example, taste smooth, sweet and creamy while the cherry tree yields blossoms much feted for their cherry-like aroma and tangy notes of green almond.
